The Agriflex automatic fermenter works in three functional stages:

MIXING:
The mother yeast is renewed by adding hot water
and flour in the following ratio:
Mother yeast 20%
Water 40%
Flour 40%
The timed electric mixers blend the mix of water,
flour and mother yeast for roughly 15 minutes

FERMENTATION:
Once the 15 minutes of mixing are over, then
starts the fermentation phase, its duration being
in relation to the working cycle chosen by the
operator among the following options:
- pH mode
- pH with heating mode
- time mode
The pH is monitored continuously by a probe that
constantly measures the acidity of the dough,
providing information on the activity of yeasts
and bacteria. During the fermentation phase, a
series of organic acids are released, including the
main component which is lactic acid.

Anti Dust system
The new provisions of the law obliges to maintain all working environments clean and under healthy hygienic conditions. To this aim Agriflex realized a dust aspiration system consisting of a hood, to be placed on the mixer and by a self-cleaning filter.

- Filtring sleeve made in anistatic fabric
- Filter cleaning electro valve
- Electric motor actiones sucking fan

Attentive to customers needs, dynamic and committed to improving production
processes since ever, Agriflex is now focusing on FLOUR TEMPERATURE
CONTROL in the dough mixing room, which is crucial to ensure CONSTANT
and OPTIMUM quality, both in industrial and small scale production of baked
goods.
The flour cooling system fine tuned by Agriflex is unique and innovative, as it allows
to decrease flour temperature up to 20 C, ensuring a constant and uniform
temperature, and eliminating the disadvantages of the methods used so far.
One of the most common and widespread methods currently used to lower
dough temperature is adding ICE directly in the mixer.
There is however a limit to it, namely the empirical way, often depending on the
skill of the operator at work, in which the following is calculated: the amount of
ice to add, based on the temperatures measured, and the reduced amount of
water to add to the dough, as part of it comes from ice melting.
Moreover, the low percentage of water in the dough during the initial phase (to
be later integrated with the addition of ice), makes it especially dry and may
even cause premature wear of the mixer and excessive stress on mechanical
parts.
Another method used for dough cooling is injecting LIQUID NITROGEN and
CARBON DIOXIDE.
Beside the high costs making these systems not very common, liquid nitrogen
and carbon dioxide enter in contact with the dough, causing a modification in
the organoleptic properties of the raw materials and the death of yeasts, as
well as uneven cooling, as the surface of dough is mostly cooled down.
Moreover, as this method does not take into account a number of affecting
factors such as flour temperature at silo outlet, the exposure of dough to liquid
nitrogen and carbon dioxide does not ensure any feedback by the operator.

Fabric Silos in Trevira Type High Tenacity Fabric suitable for internal storing of powder products.

The silo consists of:
Self-carrying assemblable structure made in galvanized steel square pipe, grooving system type, allowing an easy assembly and disassembly.

Reinforced bag body in transpiring anti-dust Trevira fabric, suitable for food products following the Italian and international standards, with high mechanical rupture resistance

Fluidised bottom stainless steel silo for the internal storage od flours, suitable for and confirm to the ECC standards.

The silo consists:
Body made with bolted modular elements built in Stainless Steel;
Fluidised bed bottom made in filtering fabric divided into sections tight-proof one from the other, with air-gap for ait inlet;

The VIBRO V vibrating sifter sieves powder products, flour and sugar.
- It ensures high sifting capacity (up to 1800-2500 kg/h), high screening effi ciency
(0.8 - 0.6 mm) combined with compact size (600 mm diameter), thanks to an
innovative vibration propagation system (patent pending).
- Automatic impurities discharge available as optional. A specially designed conveying
system ensures no waste of product.
- Made in stainless steel, the vibrating sifter is suitable for use in ATEX zone 22 areas.

- Low Noise

Indispensable to solve the problems of smaller storage. Handling bags of sugar, salt, powder milk, slows down your production, but either you do not have room for silos or your daily consumption does not justify the purchase of loose ingredients; in this case the use of a Big Bag is a very practical, handy and convenient solution and an Agriflex Big Bag emptier will allow you an easy handling of the Big Bags for powders or granules.

The AGRIFLEX fiberglass silos, available in a wide range of capacities, are built in fiberglass and polyester resin, subject to lengthened furnace thermic treatments and subsequent sterilisation in order to eliminate any kind of pollutant, thus making them particularly suitable for the storing of food products. The high degree of insulation guarantees the integrity of the products stored during any season and at any temperature.

CONSTRUCTION CHARACTERISTICS
The silo wall, notwithstanding its dimensions and capacity, is composed by 4 layers:
- The monoblocsystem structure design
- The working process on perfectly smooth cylindrical moulds
- Welding working process through MIG machine type
- Fibreglass liner crossed at 30 , with high percentage of unsaturated polyester resin
- Carrying layer made in continuous fibreglass (65% of glass on the total glass+resin)
- External protection : Repan white paint
- Polymerization treatment in furnace for 24 hours
- 100C steam sterilization

The AGRIFLEX monolithic silos are built in top quality steel (stainless steel AISI 304) and are subject to a sanitising
treatment making them particularly suitable for the storing of food and pharmaceutical products.
Furthermore, they can be antisismically certifiable in the respect of the latest applicable law regulations.

This microdosing system has been conceived in a way to allow dosing of n. 3 microingredients - as requested by the customer - and to grant 8 batches / H. The units have a capacity of 100 Lt, usually enough to store 50 Kg of improver (depending on its specific weight).

Under the units a transferring hopper moves the micro-blend to the dosing hopper, installed on top of the mixers. The transferring hopper is provided with a precision weighing system.

The system includes also:
1 Hopper for product loading
2 Pneumatic loading group into the 3 units
3 Completely scaled system and sensors in order to monitor exact doses
4 Complete automation with touch screen

The system is complying to the European ATEX laws for the prevention of powder explosion.

Units and pneumatic transport handling abrasive product (salt) are built in stainless steel AISI 316.
This microdosing system has been conceived in a way to allow a TWO PHASE PROCESS to carry out 15 batches per hour, as requested. In order to reach this dosing result, under the 6 microdosing units has been placed an intermediate weighed hopper. Under the indermediate hopper has been dimensioned a transferring scaled hopper.

HOW IT WORKS
The system is dimensioned so that while the 6 units are loaded with product and discharge into the scaled intermediate hopper, the underlying transferring hopper can transport the dosed product into the mixer bowl.

This two-phase process allows simultaneous dosing and transferring, reducing by half the amount of time needed for reaching the mixer bowl.

The system includes also:
